A lot of home cooking was and is done with charcoal, and certain species of mangrove were very good for producing charcoal. Now, using mangrove wood has been banned, but people bring wood from 'upland' - evergreen species.<br />
Here in the mangrove forest, this hut is 'smoking' the wood to turn it into charcoal.
